Make sure the steak you use for your recipe is at least 2.5cm thick; if it’s thinner, reduce the cooking time and check the steak frequently to avoid overcooking. In addition, go for steaks with a little white fat around the edges and more fat marbling on the inside. Grass fed beef such as ours is typically leaner so choose steaks with the most visible fat for this technique.
